Summer Rice Salad

This is fantastic, quick, and healthy! Ingredients for 2-3 people


  • 300 grams fresh chard greens***, with stems
  • 1 cup arborio rice (or any rice you like)
  • 1 ounce Parmigiano Reggiano
  • Juice of 1 medium lemon
  • Extra Virgin Olive oil of Tuscany or Umbria

***If you don’t like chard, try adding chopped fresh arugula (aka: rocket) or fresh radicchio.


Clean and chop chard into large pieces and boil in lightly salted water for about 15 minutes. Remove chard from water but do not throw water away!

Boil rice in the chard water to add flavor and vitamins (cooking time: see your rice package). Boil it like pasta. Do not steam it. Drain rice and discard of water. Rinse rice with cold water asap.

Mix cooled rice, a dash of salt, olive oil to your liking, lemon juice, and chard in a medium bowl. Add shavings of parmigiano reggiano and a touch of pepper and serve.
