Tomato Sauce (GiGi's Sugo di Pomodoro)

A simple and versatile tomato sauce, the base of many dishes at Ristorante Del Fagioli.

This is Luigi's (aka GiGi) recipe for Tomato Sauce.

Ingredients: 
  • Onions
  • Garlic
  • Basil
  • Peeled Tomatoes (buy these canned or better yet, prepare them yourself by boiling tomotoes about 10 minutes, then dipping them in cold water and peeling off the skins).
Instructions: 

 Finely chop onion and garlic (not too much garlic, one to two cloves) and brown them in Olive oil in a deep pot. As soon as they are browned, throw in the peeled, chopped tomatoes. Bring to a boil, then lower flame and cook, uncovered, for about an hour. (Be sure to stir and turn off the flame if it gets pasty). About 20 minutes before you turn the flame off, add in chopped basil. This sauce can be served on pasta, or used with meatballs, involtini or braciole.
